Lomi-Lomi Salmon and Tomato
Salted salmon, introduced to the Hawaiian people by Western sailors in the 19th century, folded with ripe tomato and maui onion. Lomilomi, 'massage', comes from the method with which the salad is gently tossed

Tomato-Tofu Salad
Locally-made tofu tossed with ripe tomato and farm-raised Ogo seaweed, seasoned with Hawaiian salt and fresh ginger
